Alice's Homemade Granola 🥣

2 cups of gluten free oats
1/4 cup of flax seeds
1/4 cup of chia seeds
1 1/2 cup of mixed nuts - I like to add cashews, almonds & pistachios
1/3 cup of maple syrup
4 tablespoons melted coconut oil
2 teaspoons of vanilla essence
2 teaspoons of cinnamon
Method -
- Preheat the oven to 160.C.
- Place in a bowl the rolled oats, flax seeds, chia seeds & mixed nuts.
- In a saucepan add the coconut oil, vanilla essence and maple syrup, warm until the coconut oil is melted.
- Pour the syrup over the bowl of dried ingredients and stir to evenly coat the dry ingredients.
- Pour the mixture on a tray in a single layer and bake it for 20-25 minutes until golden brown.
- Let it cool down on the baking sheet before touching, sprinkle over the cinnamon. Then once cooled start to break it to form granola clusters.
- Store in an airtight container for up to 3 weeks.
I like to enjoy my granola with Greek yoghurt and fresh fruit. 🫐
